For the Chicken

  • 1 lb chicken breasts (or 1 large breast halved)
  • 1 tablespoon + 2 teaspoons olive oil (divided)
  • 1 tablespoon + 1 teaspoon taco seasoning (divided)

For the Vegetables

  • 1/2 white onion, diced
  • 2 cloves fresh garlic, minced
  • 1 cup black beans, either rinsed canned or dried and cooked
  • 1 cup Roma tomatoes, diced
  • 1 avocado, sliced or diced

For Serving

  • 2 cups cooked brown rice
  • 1/4 cup shredded cheddar cheese (or more!)
  • Copycat Cafe Yumm Sauce
  • Fresh cilantro, chopped (optional)
  • 2 fresh lime wedges (optional)

Prepare the Chicken

Meanwhile, add 1 cup of brown rice to each bowl, top each bowl with 1/2 cup of tomatoes, 1/2 of the black bean and onion mixture, 1/8 cup of cheddar cheese, and 1/2 avocado.

Finish with Chicken & Sauce

When chicken is done, slice and then add to rice bowls. Drizzle with Copycat Cafe Yumm Sauce and finish with chopped fresh cilantro and a squeeze of fresh lime, if desired.
